Who says you can’t be healthy and eat pizza? Not me, and now you don’t even have to wait for your treat meal! This pizza piles on the protein and tasty veg, not the pounds.
CHICKEN SUPREME PIZZA
Makes 1 large pizza

Ingredients
- 1 large wholemeal pita bread
- 2 teaspoons barbecue sauce
- 1 tablespoon no-added-salt tomato paste
- 200 g lean chicken breast, thinly sliced
- 4 mushrooms, sliced
- 1/2 small red capsicum, sliced
- 1⁄2 zucchini, diced
- 1⁄3 cup grated reduced-fat cheddar cheese
Method
1. Preheat your oven to 200ºC or 180ºC fan forced. Line a large round baking tray with baking paper and slap your pita bread on top.
2. Mix the barbecue sauce and tomato paste together and spread evenly over the pita bread, then top with the chicken, vegies and grated cheese.
3. Bake for 15 minutes or until golden and crisp.
