Peanut Butter and Caramelised Banana French Toast

With whipped peanut butter cream

This French toast makes the perfect delicious, indulgent breakfast. It is best served in bed alongside a glass of orange juice and a hotcup of coffee.

 

Serves: 2

Ingredients: 

2 whole eggs

dash of vanilla extract 

splash of almond milk

pinch of ground cinnamon 

coconut oil for cooking

4 thick slices of bread (sourdough works really well here) 

1 ripe banana

Pic's Peanut Butter of your choice

maple syrup for drizzling (optional) 

 

Whipped PB cream

4 heaped tbsp unsweetened Greek yoghurt

1 tbsp Pic's Smooth Peanut Butter 

1 tbsp honey 

 

Method 

1. Place eggs, vanilla, milk and cinnamon in a wide bowl and whisk together. Set aside.

2. Heat a teaspoon of coconut oil in a frying pan over a medium-high heat.

3. Soak a slice of bread in the egg mixture and add this to your fryingpan. Cook until golden on each side, then repeat with the remaining bread slices.

4. Meanwhile, heat another teaspoon of coconut oil in a separate frying pan over a medium heat. Slice banana in half lengthways andplace in the pan. Cook until caramelised and crisp on each side.

5. To make the whipped peanut butter cream, place yoghurt, peanut butter and honey in a small bowl and mix until creamy.

6. To serve, layer your toast with your Pic’s Peanut Butter and top withthe whipped PB cream and banana slices. Drizzle with maple syrup if you like.
