Instant Chocolate Avocado Mousse
Serves 6
Prep Time: 10 minutes
150g good-quality dark eating chocolate (at least 70% cocoa solids) broken into pieces
2 ripe small to medium-sized or 1½ large avocados
?–½ cup milk (e.g. cow’s, almond, rice, oat)
1–2 tablespoons liquid honey, pure maple syrup or agave nectar to taste

To serve
¼ cup per serving fresh or frozen berries, defrost if frozen

Melt chocolate in a double boiler or in a glass bowl set above a saucepan of simmering water (make sure the water does not touch the bottom of the bowl or the chocolate could overheat or become grainy). Stir a few times until melted.

Place avocado, milk and melted chocolate in a food processor and blend together until smooth. Keep adding a little more liquid until the mousse is very smooth and light. Blend in honey, maple syrup or agave to taste.
Spoon into serving glasses and serve immediately. Garnish with berries.

TIP: Use the best quality chocolate you can afford — the better the quality, the better the flavour of the mousse.

‘I always think that canapés should box slightly above their weight – in other words, they need to be vividly flavoured to succeed. Here, the combination of crisp brioche, salty feta, pickled walnuts, figs, honey and thyme is just that. If you like, there’s a recipe for pickling your own green walnuts on page 275 of Rick Stein’s Christmas. You can also make this with slices of goat’s cheese from a log instead of the whipped feta.’
